Add sliced onions and cook on high heat for about 10 minutes, constantly stirring with the spatula. The onions should start to brown, but without burning. Reduce heat to medium and continue cooking onions for 10 more minutes, continuing to stir, as onions brown even more without burning. At this point add a pinch of salt over onions. Continue cooking for 10 more minutes on medium or low heat, stirring occasionally to make sure onions don’t stick to the bottom of the pan or burn. Ingredients
- 2 ripe bananas
- 1 flax egg 1 tablespoon flaxseed meal + 3 tablespoons water
- 1 cup rolled oats gluten-free if needed
- 1/2 cup quinoa flakes or more oats
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup mini chocolate chips
Instructions
- Preheat the oven to 350 degrees F and grease a cookie sheet with non-stick cooking spray.
- In a small mixing bowl, completely mash the banana. Stir in the flax egg.
- Add the remaining ingredients and mix until fully combined.
- Spoon the cookie dough on the cookie sheet, and gently flatten with the back of a spoon.
- Bake 13 - 15 minutes, until browned and only slightly tender to the touch. Remove from oven, transfer to a wire rack and cool.
- Store in a covered container for 2 – 3 days (if they last that long!).
